Even though I've only made 2 recipes from THIS book, I've actually made some of these same recipes from the Pro Chef 8th edition. There are several identical recipes from the Pro Chef in here, only scaled up for 50. I have no problem myself with the duplication of these recipes, as a lot of people probably wouldn't buy both of these books. The ones I've made from this book are the 'Roasted Peppers and Goat Cheese Canapes', and the 'Chocolate Mousse.' Both turned out nicely and were well received.The first 4 chapters are principles and guidelines for large quantity cooking. I found it interesting, but much of this information is in the Pro Chef also. There is also a lot of the theory of cooking and food costing, so if you're not interested in that, you might want to skim those sections. There is also a section on food safety, and it is fairly recent because it uses 41 and 135 degrees as the cool and hot temperatures. If you're at all familiar with food safety, you know what those are already, but it doesn't hurt to remind us. If you don't know those things, then get the latest Servsafe manual, as food safety is important, even at home.Next come the recipes, and they're arranged in the usual manner. Stocks, soup, and sauces; then breakfast and brunch items; salads, apps and sandwiches; entees; side dishes, desserts; and last but not least, a chapter on reception foods.All in all, a really nice book for large recipes, with some modern and some more familiar recipes, definitely worth the price if need to cook for a crowd.

This book is for you.The Culinary Institute of America sells a lot of useful books as a reference and resource for foodservice professionals working in this industry.

For a CIA book, some recipes are just not up to snuff. For example, Chicken and Shrimp Gumbo for 50 uses 8 oz of Andouille sausage, 1 pound chicken breast, and 2 1/2 pounds shrimp in 2 1/2 gallons of stock FOR 50 people I don't think so. Would you want to serve each of your guests 0.01 pounds Andouille sausage, 0.02 pounds chicken breast and maybe 1 shrimp in a bowl. Other recipes have 1/2 shrimp per person. Buyer beware!

Can someone please tell me: ingredients such as Onions, minced - 4lb 12oz, is the 4lb12oz of onions OR 4lb12oz of minced onions? In other words, are the quantities listed raw ingredient weights or finished prep weights?

I got this book for my girlfriend who is an executive chef at a grocery store. She loves this book. It's perfect for her because she has to make large quantities for their hot bar. This book is a text book for the Culinary Institute of America and is not intended for the home cook.

Love it. I'd wish they had one on desserts.

I read this book when I was much younger and no one knew about this man nor much about Arabia. I was invited to be part of a team that would start an airline for the United Arab Emirates, a rather new country (formally the Trucial Coast- tribes that warred against each other and were Bedu and pearl divers). The airline was called Hamarein Air in about 1976 and was started by one little Bedu named Saif Hamarein. He owned small mini marts all over the Emirates, but especially in Ras al Khaima and Sharjah. he raised money from those to buy a 747!I read this book as I started departing from LAX and since the flight was over 27 hours with a stop in Paris and an over night, I finished it.This man, Sir Wilfred Thesiger was remarkable and although only 29 years old, struck off into uncharted lands even the Bedu did not dare cross. He traveled and lived among the tribes of all the areas he charted and learned amazing things from the nations. Because of him today, we learned much about a peoples unknown to the western world. I often wondered what happened to him and since we did not have computers, there was little way to actually look for him. He seemed to have vanished. But on my second time living among the Emirates in the 1990's, they found him in a mud hut in Africa being cared for by an Ethiopian woman and he had satchels of film never processed from his trips in the 1940's! I own 2 of these unpublished photos of his journeys and had the amazing pleasure of meeting my idol at 90+ years old! I cherish my photo with him. He was a remarkable man who did much to bring us the very news about corners of the earth he was later to regret as it brought westernization to the quiet countries and people he adored.

I'm only about a quarter through this book, and I'm enthralled. Takes you back to another world, before oil riches flowed, to a time when conditions were unrelentingly harsh and unforgiving, where the people were hard and austere, accustomed to a life of great demands and hardships, yet also capable of great courtesy and hospitality. The author explains why he was drawn into the desert and living with the Bedu and describes how the time he spent there was the happiest of his life.Thesiger served as a foreign service officer in Sudan for a number of years as a young man before setting off on his 2 crossings of the empty quarter in southern Arabia. He notes the great abundance of wildlife in Sudan: herds of thousands of elephants, an abundance of lions (he shot 70 himself on hunting trips while stationed there). It's such a sad shame that it's almost all gone now after years of poaching, over-hunting, and civil war. Though apparently there has been some return of these animals on a much smaller scale with some degree of peace in South Sudan.It's hard to imagine that a description of desert life--traveling with camels and how important they were to survival, the daily hardships and rituals of endurance that were just routine, the constant danger--would be fascinating, but it is.Even though Thesiger's travels happened only about 60 years ago, they seem taken from a different era, a much different and wild time. It is, for example, jolting to read that slavery still very much exists in Arabia at this time. And the religious fundamentalism is striking too: for example, a Beduoin is taken aback when Thesiger tells him that in England they have weathermen who can tell you when it is going to rain; the Bedu think that is something only God knows and that it is blasphemy to say otherwise.

This is one of the all time great adventure and travel books. Thesiger describes a world and a lifestyle that is now passed away, but existed not very long ago. He was the last of the British explorers who can nonchalantly describe things like going without water for days at a time as if his local deli had forgotten to include sugar packets with his order of coffee.If you read this book, you should also catch the documentary about Thesiger on the Journey Pictures channel on YouTube. The first thing I thought upon holding How to Set a Table, Inspiration, Ideas, and Etiquette for Hosting Friends and Family by Clarkson Potter is that this slim, canvas-covered volume would make a wonderful holiday gift. It's a smallish, delightfully inexpensive book that, I'm guessing, would slip rather easily into a holiday stocking. How delightful would it be to have this little book sticking out the top, and then various other table setting components like napkins, napkin rings, flatware, place cardholders, and the like, all making up the contents of the stocking? Adorable!By now you may have gotten the idea that I really like this book. For someone like me, who has been entertaining for more years than I care to admit, there wasn't a whole lot new here. I know there are more than four types of plates or even five settings of silverware. But this is a great book for the every day person.I may never sit at a meal that has multiple courses and even use something as crazy as an asparagus fork. Truth is I am just a regular person... and that is who this book is for. I loved all the little ideas of how to re-use what you have. How to incorporate patterns, the use of patterns, and especially linen napkins! ( I personally think that is something that should be brought back!)Just putting in the effort to make whoever you are with feel extra special. That is what it is all about. I love entertaining. My two favorite parts are cooking and table settings. I was super excited to see how this book would help out and add to my skill set.I am sad to say I did not find many pros to this book. Other then the first chapter of labeling the different parts of the table, this book had no clear directions. To me, it looked more like a scrapbook taken out of magazines. The table settings did not have a back story, or any direction to it. Some of the ideas and suggestions in the text did not match the photographs. Lee is just too good to be true although he is swoonworthy.😏 It's a little preachy and long winded in certain sections. But I'm glad it touched on the hypocrisy that too often abounds in so-called Christians. Everyone was called out on it and most decided to truly do better. Eva was a lil too quick with the leap to sex for me. But she and her dad did fairly well coming to terms with their all too human frailties and remembering that one can be of God but cannot play God - especially when it comes to judgement. This story also shows that power lies in the commitment of one's heart, mind & soul & not words alone.There are quite a few typos and some unresolved issues. And that out of the blue pairing of Chloe & Jerold was very dissatisfying. But overall it's a sweet lil romance.

This was a very good book. I was glad Eva finally realized she could not marry Darral because he was the man her father had chosen and he was evil to be a christen and wanting to one day become the pastor of the church. I praise Eva's dad for seeing she was not happy and did not force the relationship and marriage to Darral. Lee surprised me with how he accepted Eva's faith and him wanting her to help him understand her faith and the bible. He was determine to show her his feelings were true and he would wait until she trusted him. Very good book and looking forward to the next one.

I have cried reading the whole book. I'm thanking the lord because this book hit so close to home and it touched my soul. This one brought a whole different feel to the others and it up lifted you. I cried and cried then laughed at the end. If you still not have read any of the books to this series then you are missing out.

This is a very good read. Loved how the story continue after the wedding. Also the parts with other people in the story. Romance is good but you're books are taking on problems in real life and I love it.

This was a good read by Me. Dowe. My very first Christian read by her that I have read. Great clean lines with hints of sensuality . It will be recommended just as all of her other books I have read.

I really enjoyed this book. The warmth and compassion was amazing. Each character had flaws, but they were able to grow and become better people. All except the character Darrel, his journey to forgiveness will take longer,and he will be missing out on the love of a good woman and his child.

I enjoyed this story even though there were several errors throughout the story. It was mention they were going to be a marry in January,but later the wedding was before Christmas. There were words that were used incorrectly . I like this coupleand glad there wasn't anyone there to pull the apart. Marrying someone you don't love is wrong. All the Bible verses made me think about what God words mean. Thank you for showing people in the church are not perfect.

I was hesitating whether to add this book to my growing collection of Route 66 books, especially as it is not exactly cheap. In addition, the term "Atlas" nowaday applies to great variety of books and I wasn't sure what I was going to receive. In the end, I decided to get it and I am really glad I did. The book covers an amazing amount of ground. For each state you will find sections on the Pre-1926 Historic Sites, Landmarks, Parks, Military, Crime and Disaster, Film and Celebrity, Transitional Sites, as well as maps and many photographs, some in color and some in black and white. This is a book for Route 66 buffs. It is hard to put down (and to pick up since it is quite hefty), and it is easy to get lost in reading the diverse history of the Mother Road. This may not be a book that you will take along with you on your trip because of the weight, but it will certainly make the preparations much more interesting. I do not regret my purchase in the least, and nor will you. The hardcover binding is very good and looks like it will last a long time. Recommended.

Very helpful information and pictures. State-by-state lay-out makes this very easy to use to refer to. Great purchase for those intending same usage or if just interested in what’s been, or still is, along this roadway.

Growing up in a town which the Mother Road went through, I was able to learn many historical facts of which I was not aware. Fun photos and great history.

Wonderful story! I really enjoyed her approach to sharing events in her life. What a tough cookie! I had no expectations that the book would be any more than what it was, a young, amazing girl telling her story as an athlete. Every once in a while I would remember that she is deaf and that would add to the incredible story, but she did not focus on that challenge; it was more about her journey in a very difficult and dangerous sport that she loves! I am so glad she retired in one piece and is giving back by teaching motocross to girls and women. You go girl!

My 16 year-old daughter is a reluctant reader at best, but a great motocross rider, riding since the age of 4. She has been fascinated by Ashley Fiolek since she was about 12, but never knew of her deafness until a couple of years later watching her on the podium! This is a well written biography that will interest most any child or parent for that matter. It shows the ups and downs of a child's motocross career from the first ride to a Pro career. It isn't a difficult read, but contains plenty of technical terms for readers familiar with motocross, while not confusing non-riders. I really enjoyed reading about Ashley's family's choices that helped her deal with her deafness and encouraging her unique talent. Well worth the read.

Bought this book for my 6 year old Daughter. Ashley is her all time favorite rider!!Ashley is her idol!!Great read, lots of encouraging words for younger girls as well as TRUTH and the hardship and sacrifices that goes into being a serious motocross competitor not just for the rider but their family as well. Ashley is an amazing talented rider and an absolutely wonderful role model for the younger female riders.

I absolutely loved this book! It's a terrific read for fans of motocross, but also tons of fun for those who don't know a lot about the sport - Fiolek does a wonderful job of explaining what certain motocross terms mean to welcome new fans. I've already read it twice. Fiolek's memoir is detailed and fun to read. It was worth every penny.

I enjoyed every page of your book; the ups and downs of motocross life, the successes, the setbacks all make it what it is. Your positive attitude and reflective nature make this book beautiful to read. As a woman who came to dirt bikes late in life, I crave female role models in this sport. Good book

I was recommended this book by a friend. I knew nothing about motocross before reading it but love biographies about fascinating personalities. Ashley's story is really cool and inspiring and it's a great example of someone who took a disability (her deafness in this case) and was able to turn it into an asset.Great read, I recommend it!

As another reviewer said, you have to have an open mind to read this book. And, I think, a twisted sense of humor. It's like the author took some facets of reality, put them in a can, shook it up and tossed them out to see what happened. I think some of the pieces broke along the way.Nathan lives in Dead Donkey, Nevada where everything sucks (but not for long). The buses run one way, the travel agency charges low prices to come to town and gouges people trying to get out. Nathan's neighbor shoots at salesmen, street lamps and anything else that strikes his fancy. Arson is a booming business, aided by incompetent firemen.Then Nathan dies and finds out what a bureaucratic nightmare death can be.This could be the strangest book I ever read. I gave it 5 stars because as weird as it was, it worked and I think Andrew deserves some credit for pulling it off.

I loved this book! The main character was raised by his father because his mother left before he was born. While nonsensical, the sentence works just fine in the context of the novel. A favorite author and acquaintance once told me that a concept doesn't have to work in my reality if it works in its own, and in the bureaucratic world of Andrew Stanek, it doesn't seem the least bit odd for a mother to leave her unborn child with its father.If Lewis Carroll, Douglas Adams,and Monty Python collaborated on a novel, the finished product might look something like this.

I like humorous fiction, but this was terrible. Perhaps children would find it entertaining, but not me. It is very repetitive and the jokes just aren't very good. I gave up after a few chapters, and I'm glad I got it when it was free.

The first four chapters started out good. But the writing style in the fifth chapter turned high-schoolish; too much detail thrown in that's unnecessary to the story.The first four chapters were quite Monty Python-esque, with heavy influence, as others have noted, from The Hitchhiker's Guide to the Galaxy. I think I detected a bit of P. G. Wodehouse, too. All three are worthy of emulation, but I think the author tried too hard.The author shows a lot of promise. I hope he hones his skill with writing courses. Orson Scott Card's free writing class/lessons and workshops at his official web site, Hatrack River (amzn doesn't allow urls in reviews), would likely fit Stanek.As long as this ebook is free, I can kinda/sorta recommend it for Python/HGttG fans of any age, as you will enjoy the first four chapters. Chapter 5 will be the make-or-break to determine if you want to finish. I did not finish.

For the many of us missing Douglas Adams and his twisted view of life and the universe, this is a lovely "echo" of his writing style.Its not really much of a "story" but could have been a chapter from "The Hitchhikers Guide." If you enjoyed that book, this will be right up your alley. All of which may sound like I'm being flippant...certainly not...to be compared to Adams is a massive compliment. And if you have heavy disdain for bureaucracy, you'll love the satire here.

This is a good book that had me laughing in many places, but, as other reviewers have said, it's a little bit muddled in terms of the setting and characters mostly being included to set up a running gag about bureaucrats and the disasters they create both in the realm of the living and the dead. When reading this, keep in mind that it's an invented world, similar to the universe where The Tick lives... where insane people and odd happenings are just expected in the worst city in the world, Dead Donkey. There are a lot of tangents where the story jumps the tracks to build for a laugh. While I didn't give this book five stars, I'd still recommend it as a light read for some chuckles. If you miss the Hitchhiker's Guide to the Galaxy series, you'll enjoy reading these books as a similar... style and craziness.

This is a, well, "different" book. It pokes fun at bureaucrats, death, bureaucrats, Nevada, and bureaucrats. And paperwork. The thesis is just plausible enough to make you wonder if it truly is rooted in reality and also makes you wonder at times if the author knows something we don't know (probably not, but still!). I wouldn't hesitate to read other books in this series from this author.P.S. - Four stars because John Steinbeck didn't write it and the author hasn't won a Pulitzer prize. Yet. Besides, the bureaucrats wouldn't sign an "Authorization to give this book a five star review on Amazon" before lunch.

Madcap is an understatement. The best part of this book is that the author not only pokes fun at bureaucracy, but at the reader, too. (Who bothered to lookup the word tontineYou Are Dead. (Sign Here Please) or Quaestor?) So many laugh out loud moments to take away from the winter doldrums (yes, I have cabin fever). Looking forward to You Are a Ghost (sign here, please).

First half of the book talks about the science of it, so if you have no interest in that just skip the the second half which speaks to the simple habits she recommends you adopt to sort of reset your brain and thus your moods and outlooks. I'm glad its so simple, as I had concern that this was all going to be one of those books that asked for extraordinary and complicated methods like so many other books. Instead I'm just adjusting my old habits to a new set of habits..

Habits of a Happy Brain is a profoundly simple, but breakthrough approach to describing daily experience and mapping it to the cocktail of neurotransmitters being released. By knowing exactly which behavior or thinking pattern releases serotonin, endorphins, dopamine, and oxytocin, we have power over our own experience. I hope that this book spurs on other research to describe other phenomena like Jealousy, malaise, boredom etc.. and a mental technology to diffuse negative states to quickly recover into a positive frame. Here are some gold nuggets from the book:Dopamine rewards you for the effort of steps toward your needs. You can stimulate the joy of dopamine by taking steps toward a goal.Oxytocin rewards you for finding the safety of social support. You can stimulate the pleasure of oxytocin with small acts of trust.Serotonin rewards you for getting respect from others. You can stimulate the pleasure of serotonin by finding the good in what you have.Endorphins rewards you for action that relieves pain. You can enjoy endorphin through laughter and exercise.This book truly is a leg up to understand yourself better as well as a gift for those who truly aspire to self mastery and positive fulfillment.

Without question, Loretta Breuning's book, chock full of explanations, research, ideas, and stories, is helping me change my life.She gives concrete examples of HOW to feel better.Her articulate explanations and stories are so easy to understand and relate to and then chapter by chapter, Breuning gives exercises and new behaviors to experiment with.For me, as someone who feels "bad" moods sometimes come out of "thin air," other people's irritating behavior is often a total roadblock,and "good" moods are elusive, this book has turned out to be a true LIFE-CHANGER!I can see where this yucky stuff is coming from... our own chemistry!!... and because of the understanding and the tools this book offers, I can actually make the changes to feel happier more, and deal more lightly and a bit more easily with the bad, and often scary, feelings.THANK YOU LORETTA!!!!

I was less than happy with this book. Although it did describe the different ways that your brain gets happy, it really was less than satisfactory in telling how to help your brain get happy in those ways, especially in regards to seratonin. There was a lot of repetition. When I finished the book, I still felt like I needed more information. It is good for a for a general introduction to the different things that affect your brain, but if you are looking for a way to move forward, this may not be your best choice. On the other hand, I haven't found anything better, so maybe I am looking for something that doesn't exist.

This is a great book! Finally, an explanation for why I tend to go back to habits of dealing with emotions that I learned in my early adolescence, and why those tendencies really never go away. I have used the things that I learned in this book to help with weight loss. It has been so helpful and uplifting to have an explanation of how my emotions work, and how I can work with my brain chemistry rather than feeling like a victim of it.

This is a fairly light read full of wisdom and powerful insights that explains the main neurotransmitters that affect us day-to-day. It is helpful for getting clear on the different neurotransmitters and how they show up in our lives in a simple and basic way. In some cases it is a little over-simplified, but this is a welcome trade-off for making the ideas easy to understand. At first I rated this 4 stars because I glossed past some of the concepts thinking they were overly simple, but this is what comes from someone who really understands that material, and in-fact they really work.

This book is for those who must understand "how" and "why" before they can be convinced to do something. Most people want to read about what to do to solve a problem; they are not interested in learning all about four brain chemicals' influences to our behavior in gritty details. This book is for those who must know the neural science behind it.Everything makes sense in evolution's stand point. when an idea makes sense to me, I can do it. I learned how to look at my day and generate some happy chemicals in my brain to improve my life.If you are one who wants to know why before knowing how to be happier, this book's for you.

Well respected researchers argue that to be great at anything is to learn and master the art of deliberate practice. Skills are learned directly or stumbled upon. I was fortunate to stumble upon Happy Habits in my quest to answer what fuels how we operate and why. The answers are in this amazing book. If you are committed to being a learn it all versus a know it all, indulge and then pay it forward. Thank you Dr. Breuning for your relentless search to the answers of thought provoking questions.
